For many Americans, January 2017 was marked by uncertainty. A 2016 slump in economic growth had spilled into the new year, and President Elect Trump hadn’t yet clarified his fiscal policies. Hoping for the best but preparing for the worst, consumers tightened their budgets and battened the hatches on non-essential spending. In response to this zeitgeist, I approached Latina magazine’s March/April recipe spread with money in mind. I'd read that Americans spent an average $2,746 a year on meals purchased during the workday, with some spending as much as $9,000 (according to a 2015 study conducted by Visa). In Packed, a cookbook focused on travel-friendly meals, I found the tie-in I was looking for: healthy, delicious, functional recipes – because they packed well – that met the budget-conscious cultural moment. They were also great for picnics, a bonus point with spring and summer approaching.
